I’m just a tad late arriving at Angie’s Fiesta Friday # 56 gathering, but I’d say better late than never eh? It’s been a whirlwind, a hustle and bustle of family affairs, trips and never ending action in this household these past few weeks. But blogging has become an integral part of my life these days, so I do try to post at least once or sometimes twice a week despite other commitments. My family do support all my blogging efforts, so that’s definitely an added bonus. One of my daughters Carol, bought this beautiful bowl and platter from Pottery Barn for Mommy’s blogging. It was just extra special when I saw her get off the Greyhound bus from NYC to DE carrying two large and cumbersome boxes that looked bigger than her. I love the colors and the pattern, don’t you? Without further ado, let me present today’s post for the lamb kofta. The koftas can be molded into round or oval shapes. We are indeed fortunate to have two wonderful and special bloggers co-hosting our party this week. Do visit their blogs and check out all the great recipes they offer. Judi@cookingwithauntjuju.com and Tina@mademoisellegourmande.com. Thanks ladies 🙂
Ingredients
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons garam masala
- 1 teaspoon chilli powder
- 1/2 teaspoon ground tumeric
- 2 lbs ground lamb
- 4 cloves garlic, crushed
- 2 teaspoons grated fresh ginger
- 2/3 cup Greek yogurt
- 2 tablespoons ghee
- 1 large onion, chopped
- 2 tablespoons full cream milk powder
- 2 tablespoons ground cashews
- 1 teaspoon sugar
- 1 1/2 cups hot water
Method
Combine spices in small bowl
Combine the ground lamb, garlic, ginger, 1 tablespoon of the yogurt and half of the spice mixture in large bowl. Using floured hands, roll tablespoons of the ground lamb mixture into koftas.
Heat ghee in a large pan; cook onion stirring, until browned lightly. Add remaining spice mixture, cook stirring, until fragrant. Gradually add the remaining yogurt, milk powder, ground cashews, sugar and water. Bring to boil, then simmer uncovered for 5 minutes, stirring occasionally or until mixture thickens slightly.
Add koftas; cover, simmer for 10 minutes. Remove lid, simmer for 10 minutes or until koftas are cooked through and sauce is thickened. Serve Kashmiri lamb koftas topped with extra yogurt if desired. An aromatic and flavorful basmati rice pilaf accompanied this heart-warming dish. The ground cashews and milk powder made this dish creamy and velvety.
This looks delicious – I wouldn’t mind a bowlful of it right now 😉

Loretta!!! So I just cooked the pork chop recipe with glaze last night – – oohhh, so good!
I know you must be globe trotting with all the family cares and concerns. Iâm thinking of you, and waiting for fairer weather, I guess. How is your mum in law?
Hope to see you soon,

Ahhh, my non-virtual friend in the flesh :)). Actually all my blogger friends, although virtual, have really become so special over the past year. Adela, I’m so happy to hear that you try out so many of the recipes that I post, it really makes me pretty chuffed. The pork chop recipe actually was featured the following week. Each week bloggers choose ones that stand out. I’ve made it with chicken too. I have another great one for you to try. We are back, it is not looking too good, but we’ve got another trip lined up in a couple of weeks with the girls, but this time we’ll be flying. Sad times, hit me up if you are in the area, I would love some company….let’s catch up over a scotch and ginger :))

I had no idea this would be so easy to make. The only problem is where to find ground lamb. Thank you!

Yes, I have to admit, not many stores sell ground lamb…. where are you? You’ll have to check with all the grocery stores in your area, or perhaps ask the butcher to mince up some lamb for you. Give it a try though, it’s extra yummy!

I just love lamb Loretta and your dish looks so good in those new bowls your daughter gave you. How thoughtful and lucky you are! Of course I call these “meatballs” and with so many good spices. Makes me hungry… Congrats on being featured, your pork chops rate high on my list. Thanks for another great contribution to Fiesta Friday 🙂

Thanks Judi, and thank you for co-hosting too. I’m crazy about lamb too, a nice roast on a Sunday would do nicely for me. Yes, I was thrilled to see that the pork chops were featured, I’ve since cooked chicken with that same glaze and it is just as yummy. So simple, yet so flavorful. Happy Sunday to you 🙂

Thanks Sandhya. It is pretty difficult to find ground lamb in most grocery stores, so when I saw it, I immediately thought of the koftas, and they worked a treat!

In the Boston area, the Market Basket grocery stores carry it as the owners are Greek. So I will definitely make this yummy dish

Ohhhh, Loretta, where to start?
Of course you are very welcome even though you are a bit late. But it’s never too late too party, right? We are glad you made it. 🙂
Also, what a perfect daughter you have. So sweet of her to bring you these plates. And they sure looks awesome, she has a good eye for those things. 🙂
And then to this dish. I love lamb and of course anything gravy. 🙂 It looks perfect and very tempting to try at home. 🙂
Oh and the blogging is rather time consuming. Hence, it’s very helpful to have a family that supports you in what you are doing.
Happy belated Fiesta Friday and a lovely week ahead. 🙂

Oh gosh, thanks so much for that detailed message :)…. your response turned up orange on the notifications, unlike all the others, how did you do that? :). Thanks for your kind words, you are so sweet. Looking forward to reading some info on the places you visit in S.A. Yes, blogging is tres time consuming, but it is rather addicting don’t you think? :). I started blogging around April last year after just having visited Brazil in March, that was my first post and I didn’t have quite the audience that I have now. I may re-blog, as it took me a long time to get accustomed to Word Press and get the exposure that I do now, thanks to Fiesta Friday and all you lovely folks. 🙂

Thanks very much. Ghee is clarified butter and is most commonly used in S. Asian cuisine. A lot of the Indian stores carry it.
