Easy Apple Crumble Cookies and giving thanks to fellow bloggers!

Making apple pie from scratch can be pretty time consuming, although it is my all time favorite American dessert.  When apples are in season in the Fall, I always enjoy making pies.  Peeling and coring the apples, making the pie crust, baking it for about an hour, gets this gal a tad impatient.  I get restless and eager, waiting to sample the  goodness and wholesomeness as soon as the oven bell dings.  Apple crumble or apple and pear crisp are also cold weather fruit desserts that I enjoy immensely.  Now, Sridevi@coconutcraze came up with a great substitute that she created with similar ingredients, only they are cookies and you wouldn’t feel so bad eating about 2 of them.  The best part?   It takes about half the time to put together.   It was downright yummy, it had all the makings of an apple pie, but in a bite-sized portion! Ingredients

  • 1 big apple chopped into small pieces
  • 1/4 cup butter
  • 1 tsp cinnamon powder
  • a generous grating of nutmeg
  • 1/4 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup all purpose flour
  • A pinch of salt

Method

  1. In a pan lightly dry roast oats. (I find that this improves its taste.)
  2. Grease a large baking tray and set aside.
  3. Cook chopped apple, butter, cinnamon and nutmeg powder in a heavy bottom pan until apple turns soft.
  4. Remove the pan and add brown sugar and stir to dissolve it.
  5. Mix oats, all purpose flour and salt in a bowl and add warm apple mixture.
  6. Stir until everything holds together.
  7. Take one of the measuring cups (1/4 0r 1/3 ) and grease it.
  8. Put a small ball of the mixture and pat it inside the cup to form a disk . Then turn it upside down, tap and drop cookie dough on prepared baking tray.
  9. Bake at 350° F for 20-25 minutes until sides and bottom starts to brown.
  10. Remove cookies with a spatula and cool them on a wire rack.
  11. Store it in an air tight container or eat them warm.

I liked the idea of forming these in a 1/3 cup measuring form. Once you whack it on the baking tray, it pops right out 🙂

This recipe yields 8 large cookies (1/3 cup size). It is crunchy, soft and crumbly all in one.  Thank you Sridevi for posting this recipe on your blog.  This week I’ve indulged in yet another blogger’s recipe that I’m happy to report.  However, the pictures weren’t that grand.     1. Oh, my pleasure Julie – your post definitely needed a shout out, but too bad my pictures weren’t the greatest. I bought a whole new pack of whole wheat flour and will be baking that bread again a few times. I learned that whole wheat flour does not rise as much as regular white flour. I’d like to try some more recipes and add extra ingredients like dried fruit etc. Yes, you should definitely give the apple crumble recipe a try. 🙂

    1. Thank you Dear Nancy, if not for anything else, you’ll just have to try these as the aromas emanating from these beauties is enough to get you salivating before they come out. Love cinnamon and nutmeg and brown sugar. Thanks for the comment on the napkin holder. My Mom passed those onto me recently. She had the set when we lived in Kenya, and I was the lucky one to have inherited it. There are several colorful napkins with the matching animal ring holder.

    1. No, I wasn’t kidding when I said I’d make them :). Loved all the flavors and the aroma was heavenly! It will be my go-to from now on when I crave apple pie. These are much smaller and not as many calories. 🙂 I see we share some similarities? Used to live in Toronto before we moved to the USA….but still visit often. We were there last week to see my ma-in-law. Also grew up in Kenya :). Love coconuts, like Kerala, Goan cuisine also uses coconut in many of the recipes.

  3. Wow, what a fantastic idea! They look so decadent. I am a big fan of English Muffin Bread, too, when I’m not trying to eat whole grains…I think I could gobble half of that loaf up – and my only worry would be just butter? just jam? Both? 🙂
