Moist Chocolate Cake (No eggs, No butter) Recipe

I have such a weakness for desserts, (I’m sure many of you can attest to that), but when it comes to chocolate, I just swoon and let my inhibitions fly out the window.  I could happily eat chocolate every single day, and for that reason alone, I do not keep it in the house.  I’ve seen some wonderful chocolate recipes from other bloggers that I bookmark regularly, however when I saw Jhul’s chocolate cake recipe with no eggs and no butter in this rich moist chocolate cake, I was sold.  I needed it, and I needed it NOW.  I try to save making desserts when we have company or when our girls visit, but this one was going to be MY special treat.  I would chop it up and freeze it in little bits and bobs so that I would not feel compelled to eat it in one sitting :).  Thanks to Jhuls for this recipe from her blog, do visit her blog, she’s a witty, warm and wonderful person from the Philippines.

Moist Chocolate Cake (No eggs, No butter)

  • Servings: 8 slices
  • Difficulty: easy

Ingredients

  • 1 1/2 cup + 2 tbsp all-purpose flour, sifted
  • 1 cup granulated sugar (I used less)
  • 2/3 cup + 1 tbsp unsweetened cocoa powder, sifted
  • 4 tsp baking powder
  • 1 3/4 cup + 2 tablespoons soy milk
  • 3 tbsp vegetable oil
  • 1 tsp vanilla extract
  • Icing sugar for dusting

Method

  1. Preheat oven to 320 deg F.
  2. Combine and mix the flour, sugar, cocoa powder and baking powder in large bowl.
  3. Mix the milk, vegetable oil and vanilla extract in another bowl.
  4. Add the wet ingredients to the dry ingredients and mix with a wooden spoon until combined, do not over mix.
  5. Pour the batter in a greased and floured 8″ round baking pan.
  6. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool on a cooling rack, dust with icing sugar before serving.
  8. This can be kept in the refrigerator for 3-4 days.

  1. So delicious looking, Loretta! When I first saw your header, I thought, hmmm…someone else just baked a cake like this. It was Jhuls!! How sweet of you to bake up her recipe and give her a shout-out. 🙂 You two are doubly tempting me to get back in the kitchen!!

  2. Loretta I always see your recipes and think hmm, one day I’ll get around to it.. But this one I know I can make it’s so simple and virtually no prep! Yay for egg-less soy chocolate cake!

  3. Usually when I make a dessert there is nothing low-fat about it. Hard to give up everything! But if you enjoyed it I am sure it has to be good – what was your husband’s opinion? Gene was always my taste tester and for a dessert I always needed his approval 🙂

    1. I tend to agree with you on that Judi. I read that somewhere else just recently too. For me, I don’t usually make desserts unless it’s an occasion or something, so why not go all the way and indulge eh? The trouble with Bert is he’s not such a sweet-tooth fan as I am, so here’s where I run into issues, that entire cake will be eaten by me, but I’ve frozen it in little bits as a special treat. 🙂 Thanks for stopping by Judi.

    1. Thanks Sandhya, that’s one reason I don’t keep chocolate bars in the house, but every so often I crave them :). On today’s FF, I’ve posted a picture of another healthy recipe (fudge bites), and believe it or not it has a can of black beans in the mix. Real good, satisfies the cravings, I can share the recipe with you if you like, as I did not on the post.

  5. This looks just wonderful, Loretta! Can’t believe that it is free of all of the “bad” stuff! However, I can’t even hide these treats from myself in the freezer! I just reach in and wolf it down, frozen…. :/

  6. Ha ha Juliana, I’m the same, but did not wish to broadcast it online :)). What helps though, is that after a few days, I forget that I have these treats in the freezer, whereas if I had left it out on the counter, they would be wolfed down in a few days :). Thanks for stopping by 🙂
