These squares can be quite addictive, consider that a warning 🙂 I recently thought to bring this with me to a pot-luck luncheon a week ago. I’ll have to say that everyone loved them, the coconut definitely stood out. Give it a try, I’m sure your palate will thank you 🙂
Raspberry Coconut Jam Squares
Ingredients
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 cup butter or margarine, melted and slightly cooled
- 1 egg beaten
- 1 teaspoon milk
- 1/3 cup seedless raspberry jam
- 1/4 cup butter or margarine, softened
- 3/4 cup sugar
- 1 egg beaten
- 1 teaspoon vanilla extract
- 1 (7oz) can flaked coconut
Method
- Combine flour, baking powder, and 1/2 cup butter in a medium mixing bowl, mixing well. Stir in 1 egg and milk. Press mixture into a greased 12 x 8 x 2in baking dish. Spread jam over mixture, set aside.
- Cream 1/4 cup butter in a large mixing bowl; gradually add sugar, beating well. Stir in remaining egg and vanilla mixing well. Add coconut, and stir well; spread mixture over jam. Bake at 350 deg for 30 minutes. Cool and cut into 3 x 1 1/2 in bars.

Coconut is my favorite. I am sure it must add taste as well as a unique texture to the squares.

Thanks Sandhya……I apologize the delay in getting back with a response. Yes, pretty sinful they were. I don’t think I’d be making them again, unless I take them as a potluck dessert or serve them for company at home 🙂 The weather is amazing, and the garden is flourishing. How is yours?

Spring has finally arrived here too Loretta. The daffodils and rhododendrons are in bloom and the tulips are just coming up.
I got some roses to plant this year and want to do a little herb garden too.
What are you planting this year?

Wow rhododendrons already Sandhya? They don’t usually come up till around May or so over here; I’ve seen many azaleas, but not rhodos. I don’t have enough sun to plant roses unfortunately, but I’m sure yours will look gorgeous. I usually add two or more perennials in the garden each year. I’ll be doing a gardening post soon, enjoy your weekend 🙂
