Tomato Basil soup

As I was looking through The Reader on Word Press a few weeks ago, my husband was in the study and caught a glimpse of Mimi’s Tomato Basil soup and muttered the words “yum, tomato soup, my favorite”.  Really?  Here was I thinking after nearly 40 years of marriage I’d have known what his favorite soup was.  I thought it was Split Pea and Ham, God alone knows I’ve made that enough times!  But I had no idea tomato soup was also under the  ‘favorite category’ 🙂

Naturally I had to give it a try.  I think I’ve gained some brownie points as a result of this soup.  Thanks Mimi 🙂 Here’s my slightly adapted version.

Sauteing the onion, celery, carrots
Adding the sun dried red peppers and baking a batch of croutons
Using the Cuisinart Smart stick to blend it all in
Silky, creamy and oh so delicious on a cold winter’s day

Tomato Basil Soup

Ingredients

  • 4 tablespoons unsalted butter
  • 1 small onion, coarsely chopped
  • 1 carrot, coarsely chopped
  • 1 stick celery, coarsely chopped
  • 4 cloves garlic, halved
  • 2 – 28 ounce cans San Marzano tomatoes, or other high quality brand
  • 6 sun-dried red peppers, jarred in oil
  • 1 tablespoon dried sweet basil
  • 1 teaspoon salt
  • 6 ounces heavy cream

Method

  1. Melt the butter in a large enameled pot over medium heat.  Add the onion, carrot and celery saute for about 5 minutes.
  2. Add the garlic halves and stir for about 30 seconds, then pour in the canned tomatoes and the sun-dried red peppers.
  3. Simmer the tomato mixture for at least 30 minutes, uncovered.  Cook longer if there’s still too much liquid; you’ll be adding cream later.
  4. Stir in the sweet basil and salt and season to taste.
  5. Let the soup cool.  With an immersion blender or a large blender jar, blend along with cream.  Return the pureed soup to the pot and heat through before serving.

I served with home made croutons and some crumbled goat cheese

    1. Ha ha, everyone is going around now asking what their husband’s favorite soups really are 🙂 I’m sure we will be making it again. Thanks for sharing your recipe, I know there will be many variations. I had the sun-dried peppers in my refrigerator so substituted them and they were fantastic.

      1. No, Loretta Thais eat a lot of soups…Miso will many meals . More hot meals are eaten here than I would ever have imagined…When I lived in the UK any glimpse of sun and the stores would be stripped of salad stuff and hubby would have had something say if I had served a stew..But here totally different…Hot meal every night… 🙂 xx

  1. Loretta, I’m with your hubby when it comes to tomato soup. I love a bowl of steaming tomato soup with croutons on top and a generous squeeze of strong Swedish mustard. I saw Mimi’s post as well and pinned it for a future cook, but now you’ve gone and made me hungry for tomato soup, so I thinking Sunday lunch.

    1. It was tres comforting on a cold and blustery day I must say. Swedish mustard eh? I’m making mental notes as we converse, so that I can keep a look out for things you’ve talked about in some of your posts. Did I mention that we found a beautiful spot for a week’s stay? Will have to give you details. Hubby wanted me to find a place that resembled Ikea, you know clean white lines and minimalist? LOL I didn’t do too badly. It’s a sweet spot.

  2. One of my favourite soups I actually cook more in the summer months. Fresh basil from the garden and best-tasting fresh tomatoes . . . am afraid I try not to use tinned ones because of tomato acids working on BPA . . . to finish this beauty add Greek yoghurt just to warm but not to split . . . beautiful . . .

    1. Ha ha Julie. I guess I must have started something when I posted this last Friday. I could see everyone walking around asking their spouses what their fav soups were LOL! Did you think it was chicken noodle for John? Getting excited for your big day I’m sure, it will be just lovely. Hoping to see some pictures 🙂

    1. Yes for sure Deeksha – soup is an all the year round staple at our house. Probably a little less so in the summer months, but there’s nothing quite as comforting as a good piping hot bowl of soup in the depths of winter.
